Recipes for this cut
- Out of the fridge 30 minutes before. Salt well.
- Sear 3 minutes a side in a screaming hot pan.
- Add butter, garlic and thyme. Baste 1 minute.
- Rest 5 minutes. Slice against the grain.
- Oven at 120C. Steak on a rack until 48C inside.
- Rest while the pan heats to blazing.
- Sear 60 seconds a side in beef fat.
- Straight to the board. Salt flakes, serve.
- Slice leftover scotch thin, cold from the fridge.
- Caramelise an onion low and slow.
- Toast sourdough in the same pan.
- Stack with rocket and mustard. Press. Go.
