About This Cut

Moombra dice their gravy beef (shin) rather than chuck. Shin is leaner than chuck but loaded with connective tissue that breaks down into rich gelatin during a long, slow braise. The pieces hold their shape better than chuck and the resulting sauce is silkier. Sear in batches before braising for better flavour. Braise covered at 150-160°C for 2.5 hours for tender pieces, or 3 hours if you want them starting to pull apart for pies.

Beef BourguignonOven braise • 3 hrs • Serves 6
You'll Need
1kg diced beef200g bacon lardons300g button mushrooms200g small pickling onions, peeled2 carrots, diced4 garlic cloves, crushed2 tbsp tomato paste2 tbsp plain flour750ml red wine300ml beef stock2 bay leaves4 sprigs thymeSalt and pepper
Method
1Preheat oven to 160°C. Brown bacon lardons in a large pot. Remove. Brown beef in batches. Remove.
2Cook pickling onions and carrots in pot until golden. Add garlic and tomato paste, cook 2 minutes.
3Stir in flour. Cook 1 minute. Add wine, stock, bay, thyme, beef and bacon.
4Bring to simmer. Cover and braise in oven 2 hours.
5Add mushrooms. Cook uncovered 30 more minutes.
6Season and serve with crusty bread or mashed potato.
Tip: Use a wine you would drink. The whole bottle goes in and the flavour concentrates as it reduces.

Beef and Guinness PieStovetop braise then oven • 3.5 hrs • Serves 6
You'll Need
1kg diced beef2 tbsp olive oil2 brown onions, diced3 garlic cloves, minced2 carrots, diced2 tbsp tomato paste2 tbsp plain flour440ml Guinness or dark stout400ml beef stock2 bay leaves3 sprigs thymeSalt and cracked pepper2 sheets frozen puff pastry, thawed1 egg, beaten (for egg wash)
Method
1Brown beef in batches. Set aside.
2Cook onion and carrot in same pan until soft, 6 minutes. Add garlic, tomato paste and flour. Stir 2 minutes.
3Pour in the Guinness. Scrape up the fond and let it bubble. Add stock, bay and thyme.
4Return beef. Simmer covered on low heat 2.5 hours until very tender. Cool completely.
5Preheat oven to 200°C. Fill a deep pie dish with the cooled filling.
6Lay pastry over the top. Trim edges and press to seal. Brush with egg wash. Score the top.
7Bake 30-35 minutes until the pastry is deep golden.
Tip: The filling must be completely cold before adding the pastry. Hot filling creates steam that makes the pastry soggy on the bottom. Make the filling a day ahead.

Pan-Seared Beef Cubes with Gibson SeasoningPan sear • 15 min • Serves 2-3
You'll Need
500g Moombra diced beef (gravy beef)2 tbsp beef tallow or olive oil2 tbsp Gibson seasoning1 knob butter (optional)Squeeze of lemon to finish
Method
1Pat the cubes completely dry with paper towel. Wet meat will steam, not sear.
2Toss the cubes with the Gibson seasoning until evenly coated. Let sit 10 minutes at room temperature.
3Heat tallow in a heavy pan (cast iron is ideal) over high heat until smoking.
4Add cubes in a single layer. Do not crowd the pan, work in batches if needed. Leave undisturbed for 90 seconds to develop a hard sear on the first side.
5Toss and sear the remaining sides, 60 seconds each. Total cook time 3-4 minutes for medium-rare interior with a deep crust.
6Add the butter at the end and toss to coat. Finish with a squeeze of lemon. Serve straight from the pan.

Pan-Seared Beef Cubes
Diced gravy beef tossed in Gibson seasoning, hard-seared in tallow on cast iron. Crusty outside, tender inside, ready in under 15 minutes.
Tip: Gravy beef is leaner than chuck so it cooks faster and dries out quickly if overdone. Pull the cubes when the centre is still pink. The Gibson seasoning carries enough salt and pepper that you do not need anything else.
