Beef
Cubes

Gravy beef (shin) diced into even pieces. Lean, full of collagen, perfect for slow-cooked casseroles and pies.
Moombra dice their gravy beef (shin) rather than chuck. Shin is leaner than chuck but loaded with connective tissue that breaks down into rich gelatin during a long, slow braise. The pieces hold their shape better than chuck and the resulting sauce is silkier. Sear in batches before braising for better flavour. Braise covered at 150-160°C for 2.5 hours for tender pieces, or 3 hours if you want them starting to pull apart for pies.
