About This Ferment
Ruby Kraut

Red cabbage carries deeper colour and more anthocyanins than green, and it makes a milder, sweeter kraut. Apple is fermented in alongside it, which softens the sour edge into something easier to eat by the spoonful.

Galangal sits behind the garlic, hibiscus flowers add a delicate floral bouquet, and beetroot powder deepens the ruby colour. Three Australian-made probiotic strains are added at the end of fermentation. Non-pasteurised, with live cultures intact.

Lactobacillus plantarumOne of the most-studied lactic acid bacteria in fermented food.
Naturally present in fermented vegetables, sourdough, olives, and the human gut. Tolerates a wide pH range and survives stomach acid better than most strains, which is why it's a workhorse of vegetable ferments. Produces lactic acid and antimicrobial compounds during fermentation that help drive out spoilage bacteria.
Lactobacillus rhamnosusAmong the most commercially used probiotic species worldwide.
Originally isolated from human and dairy sources. Notable for sticking to the intestinal lining rather than passing straight through, and for being robust through digestion. TGA-listed for general use in Australian probiotic supplements. Often paired with L. plantarum and L. paracasei in mixed-strain ferments because each strain contributes different metabolic activity.
Lactobacillus paracaseiClosely related to L. casei but a distinct, hardier species.
Naturally found in fermented dairy, fermented vegetables, and the human mouth and gut. Generally robust through stomach acid. The third strain in the trio used here, alongside L. plantarum and L. rhamnosus. Method
1Pile the leaves into a wide bowl.
2Crumble the goat cheese over the top.
3Scatter the walnuts.
4Drop spoonfuls of ruby kraut around the bowl.
5Drizzle olive oil and lemon, crack pepper, toss gently at the table.
Tip: The kraut is the dressing here. Tossing too hard breaks the goat cheese into the leaves, which is a fine outcome.

Method
1Set the cheese out 30 minutes before serving so it warms.
2Spoon ruby kraut into a small bowl on the board.
3Eat by piling a little kraut onto crackers with cheese, especially the sharp cheddar.
Tip: The hibiscus and beetroot in the kraut make the colour on a board pop. Pairs harder with sharp and aged cheeses than soft ones.
