About This Ferment
Kimchi

Kimchi is the original Korean fermented vegetable: cabbage, daikon and chilli left to develop under salt and time. Live cultures convert the sugars into lactic acid, building tang, depth and the trillions of microbes that make it more than a side.

This version is built around organic cabbage, daikon, sweet potato and carrot, with garlic, ginger, kelp, hemp seed and cayenne for warmth. Three Australian-made probiotic strains (L. plantarum, L. rhamnosus, L. paracasei) are added at the end of fermentation. Non-pasteurised, so the cultures stay alive in the jar.

Lactobacillus plantarumOne of the most-studied lactic acid bacteria in fermented food.
Naturally present in fermented vegetables, sourdough, olives, and the human gut. Tolerates a wide pH range and survives stomach acid better than most strains, which is why it's a workhorse of vegetable ferments. Produces lactic acid and antimicrobial compounds during fermentation that help drive out spoilage bacteria.
Lactobacillus rhamnosusAmong the most commercially used probiotic species worldwide.
Originally isolated from human and dairy sources. Notable for sticking to the intestinal lining rather than passing straight through, and for being robust through digestion. TGA-listed for general use in Australian probiotic supplements. Often paired with L. plantarum and L. paracasei in mixed-strain ferments because each strain contributes different metabolic activity.
Lactobacillus paracaseiClosely related to L. casei but a distinct, hardier species.
Naturally found in fermented dairy, fermented vegetables, and the human mouth and gut. Generally robust through stomach acid. The third strain in the trio used here, alongside L. plantarum and L. rhamnosus. The trio is a common combination because each works at slightly different parts of the fermentation curve and within different parts of the gut.

Serving Suggestion

Add a generous serving with eggs, avocado and toast at breakfast. Drop on top of a poke bowl, stir-fry or rice dish. Eat cold to keep the probiotics alive.

Don't Cook It
Heat above 45°C kills the live cultures. Add as a finishing element on top of warm food, not stirred into a hot pan.

Kimchi Fried RicePan fry • 15 min • Serves 2
You'll Need
2 cups cooked rice (day old works best) 4 tbsp Love Organics Kimchi, roughly chopped 2 tbsp kimchi brine from the jar 2 eggs 2 spring onions, sliced 1 tsp toasted sesame oil Beef tallow or neutral oil for the pan Soy sauce or tamari to taste
Method
1Heat a tablespoon of fat in a wide pan over high heat.
2Add the rice and press it flat. Let it crisp on the base for 2 to 3 minutes without stirring.
3Push the rice to the side and crack the eggs in. Scramble lightly, then mix through the rice.
4Add the kimchi and brine. Stir-fry hard for another minute so the rice picks up the colour and the brine glazes it.
5Pull off heat. Drizzle with sesame oil, scatter spring onions on top, season with tamari to taste.
Tip: The kimchi gets cooked in this one, which kills the live cultures. For probiotic benefit add a fresh spoonful on top after plating.

Kimchi & Avocado ToastNo cook • 5 min • Serves 1
You'll Need
2 slices good sourdough 1 ripe avocado 2 tbsp Love Organics Kimchi Flaky salt Cracked pepper Squeeze of lime
Method
1Toast the sourdough until deeply browned at the edges.
2Mash the avocado with a fork. Lime, salt, pepper.
3Spread thick on the toast.
4Top with a generous tangle of kimchi straight from the jar.
Tip: Cold kimchi on warm toast keeps the live cultures intact and gives the contrast in temperature you want.
