About This Ferment
Fennel Kraut

Sauerkraut is the European original: salted shredded cabbage left to ferment in its own juice. The salt draws out water, lactobacilli take over, and what was raw cabbage becomes a sour, complex, gut-friendly food.

This kraut leans on fennel bulb and seed, garlic, coriander, caraway and cumin for the spice profile, with hemp seed and kelp for added minerals. Aged for depth and finished with three Australian-made probiotic strains. Non-pasteurised.

Lactobacillus plantarumOne of the most-studied lactic acid bacteria in fermented food.
Naturally present in fermented vegetables, sourdough, olives, and the human gut. Tolerates a wide pH range and survives stomach acid better than most strains, which is why it's a workhorse of vegetable ferments. Produces lactic acid and antimicrobial compounds during fermentation that help drive out spoilage bacteria.
Lactobacillus rhamnosusAmong the most commercially used probiotic species worldwide.
Originally isolated from human and dairy sources. Notable for sticking to the intestinal lining rather than passing straight through, and for being robust through digestion. TGA-listed for general use in Australian probiotic supplements. Often paired with L. plantarum and L. paracasei in mixed-strain ferments because each strain contributes different metabolic activity.
Lactobacillus paracaseiClosely related to L. casei but a distinct, hardier species.
Naturally found in fermented dairy, fermented vegetables, and the human mouth and gut. Generally robust through stomach acid. The third strain in the trio used here, alongside L. plantarum and L. rhamnosus. The trio is a common combination because each works at slightly different parts of the fermentation curve and within different parts of the gut.

Spoon onto avocado toast at breakfast. Use anywhere you would normally use sauerkraut. Pairs back beautifully with a Reuben sandwich or as a topping on buttery mashed potato.

Don't Cook It

The ReubenPan grill • 15 min • Serves 2
You'll Need
4 slices rye bread 200g sliced corned silverside or pastrami 4 slices Swiss cheese 4 tbsp Love Organics Fennel Kraut 2 tbsp Russian dressing Butter for the pan
Method
1Lay the bread out. Spread Russian dressing on all four slices.
2Build two sandwiches: cheese, meat, a generous tangle of fennel kraut, more cheese, top slice.
3Heat a heavy pan over medium with butter.
4Press the sandwich in and weigh it down with a small pot. Grill 3 minutes a side until the bread is dark gold and the cheese is melted.
5Slice diagonally. Eat hot.
Tip: The kraut warms inside the sandwich but should not be cooked through. The crisp on the bread carries the flavour, the kraut cuts the fat.

Hot buttery mashed potato (made however you like) 4 tbsp Love Organics Fennel Kraut 2 tbsp good butter Cracked black pepper A handful of fresh dill or chives, chopped
Method
1Pile hot mashed potato into bowls.
2Press a small well in the centre of each.
3Drop a heaped tablespoon of cold fennel kraut into the well.
4Add a knob of butter on top, crack pepper, scatter herbs.
Tip: Keeping the kraut cold and on top means the heat does not destroy the live cultures.
