A tropical fermented relish of green papaya, pineapple and chilli, with kelp, coriander and lemongrass. A little heat with a little sweet.
Achara is the Filipino take on a fermented pickle: green papaya at the centre, sour and tangy by design, eaten alongside richer foods. Green papaya carries papain, an enzyme traditionally used to help break down protein.
This version brings in pineapple, capsicum and chilli for tropical heat and sweetness. Kelp, coriander, lemongrass and nigella seed round it out. Three Australian-made probiotic strains added at the end of fermentation. Non-pasteurised.
