Jelly Bush is the Australian Leptospermum honey, from the same plant family as New Zealand manuka. The bees work the Leptospermum flower across Queensland's National Parks and bring back a thick, dense honey with a strong, distinctive flavour. Method
1Boil the kettle and let it stand for two minutes so the water is hot but not boiling.
2Add the lemon juice and ginger to a mug and pour over the water.
3Stir the honey in last, once the cup has cooled a little, to keep it raw.
Tip: Jelly Bush is strong, so one teaspoon is plenty. Keep it off the boil to protect the honey's character.

200g natural Greek yoghurt1 tbsp Jelly Bush honeyHandful of fresh berries2 tbsp toasted oats or granolaA few crushed walnuts (optional)
Method
1Spoon the yoghurt into a bowl and level the top.
2Scatter over the berries, oats and walnuts.
3Drizzle the honey over the top just before eating so it stays raw.
Tip: Warm the spoon under the hot tap for a second and the thick Jelly Bush honey drizzles in clean ribbons.

You'll Need
1 cup rolled oats3 tbsp Jelly Bush honey3 tbsp peanut or almond butter2 tbsp chia or sesame seeds2 tbsp desiccated coconutPinch of salt
Method
1Stir everything together in a bowl until it holds together when pressed.
2Roll into twelve small balls with damp hands.
3Chill in the fridge for thirty minutes to firm up. Keep sealed for up to a week.
Tip: No oven means the honey is never heated, so all of its raw character carries straight into the finished balls.
