The farm behind the pack

Dan and Emma-Jane Burnham, fifth-generation graziers, run Stonehaven and Glenroy near Thangool in Central Queensland. Roughly 2,430 hectares, certified organic since 2016 and biodynamic on top.

The cattle are grass-fed and grass-finished. Paddocks rotated on a time-controlled plan, ground cover tracked by satellite since 2016.

A Land Restoration Fund project keeps 190 hectares of native vegetation standing, protecting waterways that feed the Great Barrier Reef.

Dan is carbon farming, too: the same rotational grazing, year-round ground cover and retained vegetation build carbon back into the soil and landscape.

Fifth-generation graziers at Thangool, Central Queensland. Dan's parents bought Stonehaven in 2004, Dan and Emma-Jane added the block next door, Glenroy, in 2008, and the family has run the two as one farm ever since.

Every pack with their name on it comes off these paddocks. Ask them anything - they're the kind of farmers who'll stand at a market stall and talk beef all day.

Worth knowing

Good questions

An independent auditor walks the farm and checks the records, every year. No synthetic fertilisers or pesticides on the paddocks, no hormones or preventative antibiotics in the cattle. Burnham holds Australian Certified Organic and USDA NOP, the Australian and US standards.

Honest answer: the certified organic label needs every step of the chain to be certified, including the facility that cuts and packs. Burnham's local processor isn't a certified organic facility, so the packs legally can't carry the label. Same cattle, same certified paddocks - the beef is organically raised, and we'd rather tell you exactly how it works than stretch a claim.

A step beyond organic. Biodynamic farming treats the whole farm as one living system - soil first, natural composts and preparations instead of bought inputs, and stock numbers matched to what the land can carry. Very few Australian beef farms hold the certification. Burnham does.

These cattle eat pasture their whole lives - no feedlot, no grain finishing. It takes longer and follows the seasons, and it shows up as deeper flavour and firmer texture in the beef. "Grass-fed and finished" is the part that matters: plenty of beef starts on grass and ends on grain.

That what the producer says is true. NV checks the claims on this page - who raises the cattle, where, how they're fed and what certifications the farm holds - against certificates and evidence, not just the producer's word. Verification covers the declared information; it isn't a food-safety audit or a health claim.
